HAKKAISAN: Signature Niigata style is known as tanrei karakuchi, which is crisp, clean and dry, achieved by slow, low-temperature fermentation.

The low temperature of around 3 degrees Celsius is kept stable by the snow.
It is a sake that has grown mellow over the course of three years in this environment.
